Sticky Lemon Chicken

What to do with all that chicken in the fridge? Try this easy sticky lemon chicken with herbed quinoa! It tastes phenomenal and is a beautiful, easy dish to serve family-style to family and friends.

Ingredients

4 Chicken Thighs / 4 Wings / 4 Legs

2 T Red Wine Vinegar

2 T Soy Sauce

2 T Raw Honey

1 t Chili Flake

1/4 c Chicken Stock

1 Lemon - sliced thin

2 T Parsley - minced

1/2 Yellow Onion - minced

2 Garlic Cloves - minced

1 c Quinoa - rinsed

2 c Water

Generous Heaping of Your Favorite Roasted Vegetables

Salt to taste

Black Pepper to taste

Directions

For the quinoa:

Heat a pot over medium heat. Once warm, small amount of canola oil, then add minced onions and saute for 1-2 minutes until tender. Once cooked, add garlic and saute until translucent in color. Add quinoa (always wash your quinoa to remove the outside bitter coating) and lightly saute, then add water, and a small pinch of salt. Bring to a boil, reduce to a simmer, and cover and cook for 25 minutes over low heat (No matter how tempted, DO NOT remove the lid during the cooking process). Once the 25 minutes have passed, remove the pot from the heat and allow to rest fully covered for 5 minutes, then fluff with a fork and mix with 1/2 of your minced parsley.

For the chicken:

After patting your chicken completely dry, season with salt and pepper then place in a hot saute pan and brown all sides (6-7 mins). Once browned, remove the chicken from the pan and turn the heat down to a medium heat. Add your red wine vinegar and reduce by half. Once reduced, add your chicken back to the pan, then add your soy sauce, honey, lemon, chili flake and chicken stock, and allow it to reduce until it's syrupy and beautifully coats the chicken.

To serve:

Place a generous serving in the middle of your favorite family-style plate, then top with your roasted veg, chicken, and drizzle all of that beautiful honey lemon glaze and tender lemons on top. Finish with a sprinkling of parsley and you've got yourself a beautiful meal guaranteed to be a hit with your family and friends!
