Spinach & Sunflower Seed Pesto

When I first came up with this recipe I was picturing walking through a beautiful, vibrant garden in the countryside and wanted to create an omelette that made you feel like you had just walked through that garden and collected the herbs and were making you and your family a gorgeous breakfast. This pesto was the perfect accompaniment to round out the dish. Give it a go and use it on your next omelette, sandwich or roasted chicken. It tastes so incredibly delicious and is so easy to make. Ingredients

2 1/2 c Loosely Packed Basil

1 c Spinach

1/2 c Sunflower Seeds

2 T Parmesan

1 Garlic Clove

2 Lemons (Juice)

3/4 c Blend Oil

Salt to taste

Directions

FOR THE PESTO:

  1. Combine all ingredients except oil in food processor and blend.
  2. While blending, slowly add oil and blend until emulsified.
