Baked Sweet Potato Fries I Basil Lemon Garlic Aioli

These baked sweet potato fries are a favorite of mine and very simple and quick to pull together! They’re absolutely delicious and a great finger food to serve at your next weekend get-together. Personally, I like to keep the feel rustic, so I like serving them directly on the parchment paper they were baked on.

Ingredients

6 Sweet Potatoes

4 T Olive Oil

2 c Mayonnaise

2 c Fresh Basil

3 T Lemon Juice (freshly squeezed)

2 Garlic Cloves

Salt and pepper to taste

Directions

For the fries:

Start by pre-heating your oven to 400 F and rinsing sweet potatoes under cold running water to remove any dirt that may still be on them.

Once cleaned, cut the sweet potatoes lengthwise into 1/4 in thick slices then rotate those slices and, cutting lengthwise again, cut into 1/4 in thick slices to form the "fry" (to maintain a rustic feel, the fries do not have to be squared off).

Drizzle with olive oil and toss until thoroughly coated, then sprinkle with salt and pepper to taste.

Place on baking sheet lined with parchment paper and bake for roughly 40 min until crispy.

For the aioli:

Combine the basil, mayonnaise, garlic cloves and lemon juice in a food processor and blend until smooth. Add lemon juice and salt to taste.

To serve:

Chiffonade some basil to sprinkle over the top of the fries once pulled from the oven and serve warm.
